Muffins


I want muffins!!! I want muffins my friend's son always says. So i tought i will write for how to make muffins at home...

Ingredients :

11/2 cup all purpose flour
1 cup powdered sugar
2 teaspoon vanilla extract ( vanilla clear extract )
1/2 cup unsalted butter
2 egg yolks ( separately whipped for good results)
1/2 cup milk
11/2 teaspoon baking powder
11/2 teaspoon baking soda

For better results always sieve the all purpose flour and powdered sugar for smooth consistency batter.

Directions

1. Preheat the oven 350 degree F ( 175 degree C) and always make sure to use the proper rack in the oven for proper baking. Grease the cup cake pan with the spray.
2. In a mixing bowl cream the unsalted butter at room temperature and the powdered sugar keep it aside.
3. Mix well the dry ingredients all purpose flour and baking soda & powder and add it to creamy mixture.
4. Separate the yolks from the eggs & whip it using a whisk or hand mixer until the stiff structure is formed over spatula.
5. Add in parts the whipped mixture with the spatula in the mixing bowl and mix it properly. Add milk to it and mix with spatula till a smooth batter is formed.
6. Pour the batter in the cup cake pan & bake it for 20-25 minutes. Insert the tooth pick in the cake it should return clean if the cup cake is baked properly.
7. Remove the cup cakes on the cooling rack for 10-15 minutes and then decorate it with the icing.

similar mixture can be used for making plain cake substitute the cup cake pan by 9x9 inches cake pan.... and the bake time will increase to 30-38 minutes

Place the cake in fridge for 2-3 hours prior to use... The yummy cupcake/cake is ready to serve.

How to make choclate cake...?


Wow !!! It's christmas time... Every where you will find the christmas trees decorated. So i thought its right time to write the cake recepie..

Ingredients

1 1/2 cup all purpose flour
1 cup confectioner's pure sugar
1/2 cup butter ( margaraine or 1/2 cup vegetable oil)
2 tablespoon hershey unsweetened cocoa
1 1/2 teaspoon baking powder
1 1/2 teaspoon baking soda
1 teaspoon vanilla extract
2 eggs
1/2 cup milk
pinch of salt to taste

Directions:

1. Heat oven to 350°F. Grease and flour 9-inch round baking pan.
2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl.
3. Separate egg whites and beat on medium speed mixer for 2 minutes slowly add milk, butter or oil and vanilla.
4. Add in part the egg white mixture to the dry ingredients with the help of spatula mix it together until medium batter consistency
5. Pour batter into greased pan or u can use parchment papers for the lining.
6. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pan to wire racks. Cool completely.

You can decorate the cake with the icing and let it set for few hours prior to eat.
